El Pollo Loco suppliers must meet strict food safety standards & undergo regular audits   

 

El Pollo Loco routinely inspects all approved suppliers' facilities as an additional measure of quality assurance    

Routine delivery inspections are conducted and El Pollo Loco inspectors randomly accompany drivers on restaurant deliveries  

Raw chicken is held at temperatures of 30-38° F, below the temperature required by the FDA. 

All of our poultry suppliers are required to test flocks to meet Federal and State standards

Strict temperature controls are enforced throughout all processing operations to eliminate bacteria

Storage temperatures re audited throughout El Pollo Loco's supply chain

Raw chicken is prepared at 40° F or below and we chill our marinade to ensure this target.

All suppliers have approved bio-security systems

 

 

All Managers must be certified in food safety at the time of employment.  We require Servsafe recertification every three years, more frequently than required.      
      

We require AI-free certification from all poultry suppliers
