At El Pollo Loco, we believe that learning is an essential part of career success and growth for every employee. To provide our managers with the greatest opportunity to achieve their goals, we have developed the Standards and Procedures Educational Card System (SPECS) and Quest Training Programs. These programs work together and build on one another as a manager advances along his or her career path.
Learning for every member of the restaurant team starts with SPECS, an innovative crew training system designed to provide every crewmember with the tools he or she needs to succeed. Crewmembers must certify in the basic position modules for their job assignments; managers must be certified in all modules.

| The Quest Management Training Program continues the journey of learning. In Quest for Shift Leaders and Quest for Assistant Managers, the candidate is presented with a variety of learning tools, from classroom instruction to self-paced guidebooks to hands-on practice in the training restaurant. The technical curriculum prepares the candidate to ensure that El Pollo Loco standards for food quality, cleanliness, safety, labor/cash controls and hospitality are met during shifts. The Assistant Manager also completes a leadership curriculum that introduces management philosophy, values and concepts. |
The growth track continues with Quest for General Managers and Quest for Area Leaders, which offer candidates the advanced skills and knowledge they need to succeed in positions of greater responsibility and reward. The technical curriculum provides enhanced operational skills training and the leadership curriculum focuses on learning, refining and practicing El Pollo Loco management skills.
All classroom training is completed at our exceptional Quest for Learning Center, located at our beautiful Support Center in Costa Mesa, Ca.
